Meet Jessica Basto,
Sous Chef at Petit & Keet.
With an impressive 14-year run at JTJ Restaurants, Jessica spent eight years at Taziki's Mediterranean Cafe and the past six years at Petit & Keet.
Starting from the ground up, tackling prep duties, and mastering the art of the kitchen line, Jessica is the jack-of-all-trades, diving into any kitchen challenge. Alan Napier, the executive chef, admiringly expresses, "Jess is the complete embodiment of the word 'hard-working.' She is passionate about her job and everything that goes along with it. She will be the first one here and the last to leave many days, and as much as I try to get her to leave early, she just won't. Jess is the backbone of this team, and there is no way we would be where we are today without her."
Is there a dish from your childhood that holds a special place in your heart? Can you share the story behind it?
I would have to say the empanadas my granny used to make. She would make masa from scratch, boil the corn, use a hen from the yard, dress it, and then make the whole thing with fresh ingredients. She did all of this over a wood fire with a small skillet. Everyone would be so excited when she would say we were having empanadas that night.
Are there any mentors or role models who have significantly influenced your approach to cooking or leadership?
Yes, my boss, Alan. He was the first to trust my passion and ability as a team member. Over the years, he has proven to be a caring and compassionate mentor, leader, and close friend. He inspires me and every staff member to improve by leading by example, day in and day out.
What is your favorite dish to prepare?
I enjoy making the Venison dish we currently serve at Petit & Keet. I especially enjoy making the Mole from scratch.

What is the most underrated ingredient?
Achiote paste.
